  MEATLESS MAIN DISHES


Spinach Lasagna
Ingredients:
1 pound ricotta or small curd cottage cheese
1 and 1/2 c. mozzarella, shredded
1 pkg. frozen spinach, thawed and drained
1/2 teaspoon pepper
1 teaspoon salt
3/4 teaspoon oregano
1 egg
1 large jar (28 oz.) spaghetti sauce
8 ounces lasagna noodles
1 cup water

Directions:
Mix ricotta, 1 c. mozzarella, spinach, egg & spices.
Grease 9 x 12 pan and spread 1/2 cup sauce on bottom.
Layer 1/3 of noodles, 1/2 of cheese mixture, 1/2 of sauce.
Repeat, topping with remaining noodles, then remaining sauce.
Sprinkle with 1/2 c. mozz. cheese (or more if desired).
Pour water around edges; cover tightly with foil.
Bake at 350 degrees for 1 and 1/4 hrs; let stand 15 minutes before serving.

This is a standard recipe in our house--easy to throw together and one that the kids always asked for when they returned home from college.
