  SALADS


Chopped Salad
Ingredients
4 ounces uncooked ditalini (small, tube-shaped) pasta (1 cup) (I have
used tiny shell pasta)
1 package romaine lettuce (8 cups)
2 cups diced cooked chicken
1 medium tomato, diced (or cherry tomatoes, quartered)
1 avocado, peeled and diced
1/2 cup sliced green onions and tops
6 slices bacon, crisply cooked and crumbled
1/4 c. crumbled blue cheese

Homemade Italian dressing--we like to make it with balsamic vinegar.

Directions:
Mix all together (cook the pasta), and toss with the dressing.

Eleanor Sondey's Connecticut Cold Slaw
Ingredients:
Chopped cabbage, carrots, parsley, and onions (amounts to taste)

Dressing: 1 Tablespoon of Salad Oil
1-1/2 Tablespoons of vinegar
1/2 teaspoon of salt
1-1/2 Tablespoons of sugar

Directions:
Blend well and pour over cabbage.
